This talk defines the Extreme Citizen Science learning posture and applies it to the development of a Polarimeter from scratch using an Arduino microcontroller and the ModelPlug library in Wolfram SystemModeler. The Mathematica Computational Essay gives a narrative of data wrangling, uncertainty and calibration. The Polarimeter determines the sugar content of soft drinks, in support of an investigation into nutrition.
